Leopard Print Pancakes

Ingredients:

  • 450 ml milk

  • 190 g flour

  • 50 g butter

  • 50 g sugar

  • 2 eggs

  • A pinch of salt

  • Cocoa powder

Instructions:

  1. Prepare the liquid base.
    Slightly warm the milk. Melt the butter separately and add it to the milk. Mix well.

  2. Egg mixture.
    In a deep bowl, whisk the eggs and sugar until the mixture becomes lighter in color and slightly fluffy.

  3. Make the batter.
    Add the milk and butter mixture to the eggs. Gradually add the sifted flour and a pinch of salt, mixing until smooth. The batter should have a consistency similar to light cream. If it is too thick, add a little more milk.

  4. Divide the batter.
    Split the batter into three parts:

    • Base batter: add 1 teaspoon of cocoa and mix (light brown color).

    • Spots batter: add 2.5 teaspoons of cocoa and mix (darker shade).

    • Outline batter: add 4 teaspoons of cocoa and a small amount of milk to achieve a thick but pipeable consistency (darkest shade).

    For convenience, transfer each mixture into separate piping bags or squeeze bottles.

  5. Create the pattern.
    Heat a lightly greased pan. Using the darkest batter (outline), draw irregular circles and shapes resembling leopard spots.
    Fill the inside of these shapes with the medium cocoa batter. Let them cook for a few seconds until slightly set.

  6. Add the base layer.
    Once the pattern has set, pour the base batter over it, swirling the pan to spread it evenly.

  7. Cook the pancakes.
    When the edges begin to lift and the bottom is golden, carefully flip the pancake and cook the other side. Repeat with the remaining batter.
