Ingredients:
500 g flour
2 eggs
150 g sour cream
150 g sugar
120 g butter
0.7 teaspoon baking powder
half a cup lemon juice
For the cream:
200 g cottage cheese
60–70 g sugar
1 lemon zest
Preparation:
In a bowl, mix flour, sugar, melted butter at room temperature, sour cream, baking powder and lemon juice, knead a soft dough. For the cream, use grated lemon zest, cottage cheese and sugar and mix well. The finished dough is rolled out in a round shape and cut into squares. Then, the cream is put into the cut dough, the two edges are closed and the middle is left open. Finally, the cookies are baked at 170°C for about 25–30 minutes. When the cookies are cooked, sprinkle a layer of sugar on top.
